Will Store within a Store Be a Future Retail Food Trend?

Store within a store isn't a new idea so J.C. Penney Co. Inc. is launching a Disney shop inside 565 stores Oct. 4 after launching the shop online Sept. 6. They will range about 800 to 1000 sq feet in size.
Store With a Store at Supermarkets?
Given the intense competition at retail grocery and a lack of differentiation for most retail banners, I wonder why "Store within a Store" is not popping up.
With so many artisan and specialty food brands coming to the market, a specialty "Store within a Store" would make sense. New brands would be given a fixed amount of merchandising time and brands would rotate throughout the year. If a brands gains traction their, then retail buyers would have metrics to make the decision to give the brand shelf space in the appropriate category in the main section of the store.
Bed Bath and Beyond World Market
I am not sure what the roll-out plans are but BBB is carving out space, maybe 2000 sq. ft in select stores for an upscale gourmet food department. Makes sense since this has synergy with their kitchenware department and also happens to be adjacent to that department.
